Raw Carrot Soup

This soup is surprisingly simple and quick to make. It’s a healthy, raw and vegan friendly soup that is nourishing and comforting. This soup uses cashews for the cream base and has a lovely creamy texture. The soup can be warmed up by leaving the blender on for 5 to 6 minutes.

Shelf life: Eat immediately

Time: 5-7 minutes

Servings: 1

Equipment: Blender

 

Ingredients:

  • 130 gr carrots
  • 50 gr cashews
  • 80ml water
  • ½ tsp seasalt

 

Directions:

  1. Put all ingredients into your blender and blend until smooth. Let the blender run for 5 to 6 minutes if you wish to warm up your soup.
  2. Transfer the soup into a bowl.
  3. Sprinkle it with garnish e.g. grated carrots, pepper, paprika or hot chili powder. Enjoy your soup immediately!
